Wie der Name sagt, werden Abdampfschalen zum Verdampfen von überschüssigem Wasser oder Lösungsmittel eingesetzt, damit darin gelöste Stoffe zurückbleiben oder um eine konzentrierte Lösung zu erhalten. Dieser Vorgang wird auch Einengen genannt.
Die Abdampfschale ist relativ flach und hat eine grosse Oberfläche, was das Verdunsten von Flüssigkeit begünstigt. Schon durch leichten Luftzug wird der Dampf abtransportiert. Bei einem Kolben oder Becherglas würde beim Erhitzen ein Teil des Dampfes an der Gefässwand kondensieren und zurück in die Lösung fliessen. Nachteil der flachen Schale ist, dass das Erhitzen vorsichtig geschehen sollte, da die enthaltene Lösung leicht verspritzen könnte.
Im Labor wird heute meist eine Rotationsverdampfer an Stelle der Abdampfschale eingesetzt, da dieser schneller arbeitet und den Einsatz eines Unterdrucks oder Vakuums gestattet. Auch Siedeverzüge kommen seltener vor. Siedeverzüge bezeichnet ein Phänomen, dass unter bestimmten Bedingungen Flüssigkeiten über den Siedepunkt hinaus erhitzen können, ohne dass diese sieden.
